Ingredients
1 can of black beans drained and rinsed
1 can navy beans drained and rinsed
1 cup frozen corn
1/2 cup salsa Pace Picante sauce (or any brand you prefer)
2 cups rice (white or brown)
Ideas for toppings
Shredded Cheese
Olives
Guacamole
Corn chips
Chopped green onion
I cook my rice in a rice cooker, it takes about an hour. Cook your rice however you are comfortable, following the directions on the package. I feed 5 people with some leftovers when using two cups of rice. Feel free to cut this down if you need to.
Wash and drain the two cans of beans and place in a sauce pan. Add the corn and salsa and heat through.
I place the rice in the bowl top it with the beans.
I also add some of the toppings listed above. You can become inventive depending on what you have in the house.
