When I was a girl thing finances were tight for my parents. My father worked at Del Monte cannery in Oakland, California and my mother did part time bookkeeping for my grandparents at Montclair Pet Shop also in Oakland. I didn't know we had financial issues. All I knew was I was loved and got a bunny for Easter!
This dish came about because my mother was ill and my father was in charge of dinner. My father at his current age is not a bad cook but when he was younger (eye roll). So, he scraped through the cupboards and refrigerator, all he found was a package of ground beef, a can of white hominy, flour tortilla's, can of kidney beans, a few spices, and some cheese.
The Daddy's Pie was invented! It has been my favorite, my entire life. Each year for my birthday, I asked if I could have Daddy's Pie and an Angel food cake.
I have changed the recipe over the years to make it quick and easy. Easy enough to come home from working a long hard day and still be able to make it in a short time. It is filling and hearty.
Ingredients:
Corn tortilla's (Daddy use to use flour)
1 large can hominy
1 can kidney beans
1 package of Taco Seasoning (Daddy mixed his own)
1 1/2 cup shredded cheese (to your taste, I use a mixed blend)
1 pound of ground beef (I have used ground turkey)
Brown the ground beef in a skillet and drain off the excess grease. Add the Taco Seasoning per packet directions.
I open and rinse the canned items.
I then add the hominy and kidney beans to the beef mixture and heat through.
Preheat oven to 400 degrees
This is what it should look like when you are done.
I use a 2 and 1/2 quart casserole dish.
Now the fun starts!
Put down a layer of tortilla's on the bottom of the dish and scoop in about a quarter of the mixture in the skillet. Cover this with cheese and then another layer of tortilla's. Repeat the process till you get to the top with a last layer of cheese. Now put your tortilla's over the top of the casserole and make sure you can't see anything underneath. These will crisp up beautifully to nice crunchy chips. If you don't have enough to cover the entire family you will be in trouble.
I put this on a pizza pan with a piece of foil under it because I have a habit of over filling the casserole dish. I have cleaned up enough overflow to know better. If you want to chose a bigger casserole dish to avoid this feel free.
Place in a 400 degree preheated oven for 25 minutes.
This is what it should look like right out of the oven.
I never have enough chips for the kids. I usually quarter corn tortilla's and put them on a cookie sheet. Five minutes prior to the dish coming out of the oven, I slide the cookie sheet on the lower rack and let them bake crisp.
Scoop it out and enjoy!
