Hello Everyone!
Let me introduce myself, I'm Lisa Weston aka The Crazy Lunch Lady.
I am the mother of three girls and happily married for 20 years to my wonderful husband Glenn. I have had the pleasure of being the "lunch lady" at our local grade school since 2005. Let me introduce my girls Marissa 15, Emily 17, Corrin 25 and my husband Glenn. The creation in the photo was baked by my daughter Emily, with decoration ideas from Marissa. The famous Cookie Cake which I have been making for the kids since Corrin was five.
The thought process behind this page is to share fun easy recipes with everyone. My girls also enjoy being in the kitchen and trying new things. They will be contributing their own recipes, which will give us a birds eye view of what kids enjoy eating and making. Each of my daughters started cooking as young girls and now create their own recipes! Some of which have secret ingredients they won't even tell me.
I know what it is like for us as parents to make ends meet and try to provide the healthiest meals we can with what we have. It is not always easy. Nutrition is important but there are times in our lives where we are not able to buy the freshest materials to do so. You feel guilty when you are unable to go to a farmers market and to name brand stores to buy fresh foods. You may be receiving food from a food bank or shopping at discount grocery stores. I have had to experience all of these aspects and find a way to make recipes without all the ingredients.
I want to incorporate cost effective meals for families with the freshest products we can, but keeping in mind these are not always available due to high rising food costs and cost of living difficulties. Hopefully, I will be able to help you work outside the box with how you are currently cooking your family meals. Plus give you quick, fun and tasty recipes the whole family will enjoy.
I'll do my best to help you find alternate ingredient to accommodate food allergies and or taste preferences.
My family has allergies to dairy, bell peppers and citrus. Glenn, Corrin and Marissa all have dairy allergies. Emily has to restrict her carbohydrates due to a birth defect that affects her kidneys and she and I are both allergic to bell peppers. Marissa has recently decided to become a vegetarian. Plus lets add the fact of personal taste to the mix! So, as you can see, like your household I have loads to work around.
