This was a mad scramble dish tonight. We are a bit short on funds and meat in the house, so I was searching for a recipe that I could cook which was healthy and hearty. I stumbled across a Orzo with Garden vegetables recipe that looked yummy!
Of course I was missing the Orzo, the zucchinis, shallots, garlic and fire roasted diced tomatoes.... I know that is a load of ingredients. I took a look into the pantry and fridge for what I had that could make a similar dish and this is the result. Which, I might add, everyone ate.
Pearl Couscous (made to box instructions, we used 1 cup of couscous for 3 people)
1 bag of mixed vegetables 12 oz fresh (broccoli, carrots, and cauliflower)
Three diced Roma tomatoes
1 tablespoon curry
1/2 teaspoon pepper
1 teaspoon salt
2 table spoons of olive oil
I put the couscous in a separate pot to cook. This took about 8 to 10 minutes.
In a large skillet over medium heat place oil and veggies. Add the spices and saute. Put 1/4 cup of water and put on the lid. While that is simmering, dice up the tomatoes. Remove lid when the water has evaporated and add the tomatoes. Place lid back on and cook for 5 minutes.
I put the couscous on the plate and place the veggies over the top. I also put a three cheese blend on the table if anyone wanted to add it. I ate it with and without the cheese they were both good.
