My husband has been bugging me for Sloppy Joe's for quite a while. I loathe the package mix that you get in the store for these. It always gives me indigestion. So, I've been searching some of my older cookbooks which some date back to 1946 and came up with this recipe which was a combination of a few different recopies. I made these tonight with a standard pasta salad and sauteed white mushrooms. It was a hit.
Ingredients: Sloppy Joe
1 1/2 pound of lean ground beef
3/4 cup of ketchup
2 tablespoons of brown surgar
1 cup of water
1/2 teaspoon of black pepper
1/2 teaspoon of cayenne pepper
1 teaspoon of Dijon mustard
3 dashes of Worcestershire sauce
I browned the ground beef in a frying pan and drained off the excess grease. I added the rest of the ingredients and stirred to make sure they were blended well. I brought them to a boil and then turned down to low and simmered till the sauce was thickened.
White Mushrooms
I cut the mushrooms into thin slices. I put one table spoon of butter in the pan and melted it. When it was warm enough I just threw the mushrooms in and cooked till they were golden brown. I did this as the Sloppy Joe was on a simmer to thicken.
Bread
I bought over sized sesame buns at the store. I put the oven on high broil. Be VERY careful with this because it only takes moments to toast the bread this way and I almost burned it...... You just want a toast to the bread so it doesn't become soggy when you put the Sloppy Joe mixture on it.
That was it, simple and sweet. It tasted so good that my husband and daughter had seconds. It was nice to serve this open faced because it cuts your carbohydrate count and gives you the opportunity to have more meat.
