In prior posts we have discussed how expensive it is to feed our families on small budgets. This salad is easy to make with inexpensive ingredients and no skimping on taste.
Ingrediece:
1 1/2 romaine lettuce (we got this in a package of three for $3.00 at Grocery Outlet)
1 can of black bean (drained and rinsed)
3 stalks of celery
1 can of corn (drained and rinsed)
3 roma or bangalore tomatoes (we also got these at Grocery Outlet)
1 red bell pepper
1 green bell pepper
3 spring onions
I am sure you all know how to make a salad hehe but...
Emily washed, dried and cut up the lettuce and celery.
When you use the bell peppers make sure you julienne them for the best look to the dish. Chop the onions to any size you are comfortable with. When she served the salad she did not mix it so we could all see the beautiful colors it provided.
Emily also did not add the dressing due to our families individual tastes. She put a few different dressings on the table but made the one listed blow, for us less picky eaters who are far more adventurous peeps.
Cilantro Dressing:
1 1/4 cup of chopped cilantro (make sure to remove the stems)
1/2 cup Greek Yogurt (we used plain yogurt)
1 clove garlic (we used 1/4 tea spoon of dry garlic)
1 lime
pinch of salt (we left this out)
1/2 cup olive oil
2 Tbl spoon apple cider vinegar (we used balsamic)
We placed all ingredients in our blender and zapped it till it was smooth. It smells amazing!

I want to show all the alternatives we use when we cook so you can try to think out of the box with your cooking. You don't always need all the high priced ingredients or exactly what is on the list to make a recipe good and call it your own.
We ate this with the Chicken Veggie Fajita's and it was a great compliment.
