Potato Soup
Ingredients:
1/4 cup of flour
2 cups of low sodium chicken stalk
2 cups of fat free milk
1 1/2 pounds of potatoes peeled and diced (I used small red potatoes)
1/2 cup fat free sour cream
1 teaspoon Kosher salt or to taste
1/2 teaspoon of pepper
5 slices of turkey bacon (cooked and diced)
3 teaspoons of chives (fresh)
1/2 teaspoon of fresh chopped thyme
Directions:
In a large pot add diced bacon and cook until crispy. then removed an area to drain off the fat. Keep about three tablespoons of the fat and get rid of the rest.
Add the flour and stir until it is cooked. Make sure you keep stirring it so it doesn't burn (I cook mine over medium low but each stove and pot is different).
Then stir in chicken stock until well blended. Then add the milk, potatoes and the bacon. Do not boil..... cook only to a simmer or you will burn the milk in the dish.
Now keep it at a low simmer and put the lid on. For about 15 to 20 minutes depending on the stove and the pot. You want to cook it until the potatoes are soft but not mushy.... Keep in mind the size you have cut your potatoes.
When the soup is cooked add in the sour cream, salt and pepper to taste.
Adding topping can and will enhance the taste. I give my family options like shredded cheddar cheese, chives, sour cream, extra bacon the sky is the limit.
